And it has done so while maintaining its family business spirit thanks to the unique figure of Manuel del Rey , the founder of the tablao.
Coming from a family dedicated to haute cuisine, who at the time ran the famous restaurant Riscal, he decided to take the leap and start his own business, devising the formula of success today to combine the best flamenco with a single experience high-end restaurant.
Today it is her children, Juan Manuel and Armando, who are in charge of running the emblematic institution, submerged in recent years in a profound process of renewal that keeps it at the forefront while keeping intact the essence that makes Corral de la Morería.
In recent years, the tablao has had the advice and collaboration of renowned chefs such as José Luis Estevan -Lgrimas Negras-, Salvador Brugués -world expert in vacuum cooking-, and the pastry chef Jordi Puigvert -Les Cols, Alchemy-, who have updated and enriched the letter.
This process of evolution today reaches its zenith with two outstanding milestones; the signing of David García as chef and the opening of the Corral de la Morería Restaurant.
David García is an outspoken defender of the organic garden, controlled cultivation and good raw materials, his cuisine with Basque roots stands out for the broths, funds and juices, made with natural products and first quality.

This chef born in Bilbao, has a passion for cooking tattooed in his DNA. He had not even turned 18 when he began to learn the trade of the stove in the family restaurant, the Thames. Later he graduated from the Eide Hotel School in Santurce, and as a result, he trained with great masters of cuisine, such as Martín Berasategui.
He also did a stage in El Bulli and the last years, before moving to Madrid, he lived them in Nerúa, the restaurant located in the Guggenheim museum in Bilbao. In 2014, he got a Michelin star as head chef of the Álbora restaurant.
